Be the Consummate Host by leading the Bakery team to produce the best baked goods at sea, surprising and delighting our passengers throughout their cruise

Job Description

Responsibilities 

  • Effectively manages the production and delivery of bakery items for all food outlets, always ensuring compliance with Company recipes and picture presentation as the minimum standard
  • Always ensures product quality through tasting and managing and participating in mise en place during production periods
  • Demonstrates knowledge of new trends and production methods and regularly seeks guidance from the Executive Chef on implementing suggestions
  • Effectively manages the Bakery galley staff during all operational activities and service periods, ensuring adherence to Company standards
  • Conducts daily briefings with the Bakery galley team to discuss the previous day's operational performance and efficiency, and upcoming production and events
  • Knows team’s role descriptions, delivers them to all team members (new joiners, returning crew, and promoted crew), and communicates clear expectations based on each role description
  • Observes each crewmember’s performance using his or her role description as a guide and delivers prompt and appropriate correction, improvement, or reinforcement. Coaches and develops skilled, engaged team members to become the Consummate Host
  • Identifies top performers and mentors them for career advancement or promotion
  • Always monitors costs and expenditures of Bakery operations, and controls production levels, targets, and par levels to ensure they fall within the established budget
  • Always monitors consumption trends in the various outlets and sets production levels accordingly, consistently informing the Executive Chef of changes within an appropriate time frame
  • In addition to the Key Result Areas and performance items listed in this Role Description, employee also performs any other duties as assigned by management

 

Requirements

  • Degree in Bakery from a recognized culinary institution or three year apprenticeship in lieu thereof
  • Minimum of 6 years experience in large volume hotel or food service operations preferably with cruise ship experience of which at least 2 years experience was as Chef de Partie Baker or equivalent rank
  • Must be able to adjust production methods / production as necessary to maximize cost effectiveness
  • Must be able to train a multicultural staff
  • Ability to manage a large volume production schedule and team
  • Proficient knowledge of MS Office and job related computer software
  • Ability to speak English clearly
