Internationally-acclaimed boutique property Rosalie Bay Eco Resort, on Dominica’s southeast shore, is reopening in February after an extensive restoration following 2017’s Hurricane Maria.

Reporting to the Operations Manager, we are seeking an experienced Executive Chef to perform duties including (but not limited to):

  • Hands –on meal preparation for all facets of an upscale beachside resort catering to a discerning international client base.
  • Menu design and implementation combining Dominican, Caribbean and global culinary influences, prioritizing locally-sourced organic ingredients.
  • Prepare budgets for Resort Management.
  • Control inventory and operating costs.
  • Ensure optimum revenue and profitability for the Resort, maximizing the contribution from food and beverage.
  • Along with the F&B Manager, train, schedule, motivate, manage and hold accountable kitchen and front-of-house team members. Maintain the highest food quality, presentation and sanitary food handling/storage standards.
  • Interact with diners property wide as time permits.  Be visible to resort guests. Promote whenever possible the holistic, environment-friendly culture of Rosalie Bay Eco Resort & Spa.
  • Participate in the solicitation and execution of banquet and special events business.
  • Uphold safety protocols for all resort visitors and personnel.


QUALIFICATIONS:  The successful candidate will possess a minimum 5 years’ tenure in high- end hospitality sector food preparation environments, proof of completion of professional culinary coursework, experience with foodstuffs, kitchen equipment and supplies sourcing and purchasing, proven track record in achieving dining establishment profitability and team leadership. Knowledge of hospitality POS systems. Must be available to work evenings, weekends and holidays. Ability to communicate effortlessly in English is a must.


COMPENSATION: Competitive and commensurate with education and experience. Resort will cover work permit and health and food safety certification costs where applicable.
