As Senior Chef de Partie, you will manage this dynamic department with flair, engaging your team and inspiring a complement of truly spectacular menu offerings.


Summary of Responsibilities:

Reporting to the Sous Chef, responsibilities and essential job functions include but are not limited to the following:            

  • Consistently offer professional, friendly and proactive guest service while supporting fellow Colleagues
  • Conducting daily shift briefings with Kitchen Colleagues
  • Managing inventories, pricing, cost controls, requisitioning and the issuing of supplies and equipment for food production
  • Costing menus accurately
  • Ensuring all Kitchen Colleagues are aware of standards and expectations
  • Liaising daily with the Outlet Managers to communicate regarding guest feedback
  • Maintaining and enhancing the food products through creative menu development and presentation
  • Maintaining superior hygiene, health and safety standards, including cleanliness, maintenance of all work areas, utensils and equipment as well as effective rotation of product in chillers
  • Ensuring effective staffing and scheduling in accordance to productivity guidelines
  • Following kitchen policies, procedures and service standards and all safety and sanitation policies when handling food and beverages
  • Other duties as assigned



  • An accredited Culinary Diploma or Certificate is an asset
  • 5 years relevant experience working in all areas of a luxury hotel kitchen
  • Strong supervisory skills
  • Able to provide effective training
  • Excellent customer service, team, communication, interpersonal, and multi-tasking and problem solving skills
  • Be accountable, reliable and flexible
  • Able to work efficiently and cohesively within a team, under pressure in a fast paced, multi-cultural environment
  • Basic computer skills with a working knowledge of MS Office an asset  
  • Physical Aspects of Position (include but are not limited to):
  • Working in various conditions and environments (indoors and outdoors)
  • Constant standing and walking throughout shift
  • Frequent lifting and carrying up to 30 lbs
  • Occasional kneeling, pushing and pulling
  • Occasional ascending and descending stairs and ramps, using elevators



  • Must be able to work flexible shifts including nights, weekends and public holidays.


Visa Requirements: Non-Bermudian candidates will need to qualify for a Bermuda Department of Immigration work permit applied for by the Fairmont Southampton Hotel.
